Espresso Thin Mint Cookies
I was walking out of the Exchange the other day and the Girl Scouts were selling Girl Scout cookies. I was sure not to make eye contact because I have very little self control when it comes to those things and once I buy them, end up devouring a whole box in no more than 2 days. My favorite are their Thin Mints. Well I looked down at the Starbucks Caramel Macchiatto in my hand and thought, if those girls had a thin mint cookie with espresso in them, there would be no way I could say no.

Sugar Cookies
I've been feeling rather bummed lately because I know I won't be home for the holidays this year and when I realized I would miss all the baking for Thanksgiving and possibly Christmas, I decided to have Christmas in July. One thing that is a tradition in my family, dated back to when I was a kid, is making sugar cookies. We usually would cut them into little snowman and candy cane shapes and decorate them with gobs of frosting, usually causing diabetic shock to anyone who dared eat one, but considering it is July, I decided to just go with a basic round cookie this time.

Chocolate Chip Cookies
I have a few different kinds of cookies on this blog but I haven't posted a basic chocolate chip cookie recipe. Chocolate chip cookies are simple, all-american, and in my opinion, a staple recipe for any baker. I've been trying to bulk up my blog with basic recipes for people who don't bake often like I do and I thought this would be a good start.

Bacon Chocolate Chip Cookies
That's right. I said bacon. In fact, when I went to the store to pick up the stuff I needed, I'm sure it looked weird to the cashier that I was buying 1 gallon of milk, a 12 oz bag of chocolate chips and 3 lbs of bacon. No, this recipe doesn't call for 3 lbs of bacon, but I feel like I should always buy in bulk. I guess it's that mom mentality. Anyway, I know you're probably thinking bacon in cookies is weird. Trust me, at first I thought it was weird. But who doesn't like that salty and sweet combo? Plus, you know what they say, "Bacon makes everything better!" I personally, think Nutella does, but that's an argument for another day.

Snicker-doodles
It's official. I have a problem. I wouldn't have come to this conclusion except for the fact that I told both my boys that they had to wait until after dinner. Meanwhile, I'm sneaking these when they aren't looking. I won't tell you how many I've already had, (keep in mind they've been out of the oven about 10 minutes) but I will say it rhymes with what these taste like - Heaven. Chocolate Peanut Butter Cookies
These. Cookies. Are. Freaking. Awesome. Or, as my boss would say, "Dude, those cookies are pretty legit."
Who doesn't love the choco-peanut butter combo? (Aside from my best friend, who has this hatred for peanut butter that I will never comprehend.) I bought these peanut butter chips without really knowing what I would do with them, and then in the end just decided to put them in chocolate cookies. (I know, not that creative but it's been a long day and I just love cookies!) As a last attempt to make them pretty and worth blogging about, I decided to drizzle some chocolate on top.
