Marble Pumpkin Brownies
Chocolate and pumpkin? Yes please! My second favorite dessert (after cookies) is brownies. So of course, it would only make sense that on The Great Pumpkin Recipe Journey I added this recipe. These brownies are moist and delicious and swirled with pumpkin and cream cheese. So what are you waiting for?

Pumpkin Pancakes
Baked Pumpkin Empanadas
I had some batter left over from making Mini Pumpkin Pies and I didn't want to waste it. My initial idea was to make some more pie crust the next day and use the rest to make more pies, but then my mom gave me an idea on a twist to basic pies. Empanadas!
Roasted Pumpkin Seeds
And now it's time for the simplest recipe ever. Roasted Pumpkin Seeds! A delicious, yet healthy snack that can be whipped up between those Mini Pumpkin Pies and Pumpkin Pancakes! Waste not, want not, that's my motto! Simply meaning, if you can use something you might otherwise throw away, then why not use it?
Flaky Pie Crust
If you recognize this photo, it's because I used this pie crust for my Mini Pumpkin Pies. I also used it for my Pumpkin Empenadas during the Great Pumpkin Recipe Journey. It is flaky and delicious!
Mini Pumpkin Pies
First stop in the Great Pumpkin Recipe Journey is (surprise, surprise) pumpkin pie! I wanted little serving sizes so I made them miniature. It might also have something to do with the fact that it's no surprise that I love miniature desserts!
Pumpkin Puree
For a typical pumpkin recipe, you can use a jar of pumpkin puree. This can come in handy if it's the off season and a pumpkin is difficult to find. However, during the fall season, when pumpkins are a plenty, it only makes sense to use fresh. It tastes better and isn't too difficult to prepare.
The Great Pumpkin Recipe Journey
Okay so in the past, I'll admit to having said that I don't like pumpkin recipes, aside from pumpkin pie. Well I'm definitely someone who believes that you have to try something at least twice, sometimes more than twice, to really get the taste for it. After that, it really is probably just something you don't like.
