Chocolate and pumpkin? Yes please! My second favorite dessert (after cookies) is brownies. So of course, it would only make sense that on The Great Pumpkin Recipe Journey I added this recipe. These brownies are moist and delicious and swirled with pumpkin and cream cheese. So what are you waiting for?
Ingredients:
1 package (8 oz) cream cheese, softened
1 c. pumpkin puree
3 egg
2 tsp. ground cinnamon
1/2 tsp. nutmeg
3/4 c. unsweetened cocoa powder
1/2 tsp. baking soda
2/3 c. vegetable oil
1/2 c. boiling water
2 1/3 c. granulated sugar
1 1/3 c. all-purpose flour
1 tsp. vanilla extract
1/4 tsp. salt

Beat cream cheese, pumpkin, one egg, 1/3 c. sugar, cinnamon, and nutmeg together in a small bowl. Set aside.

In large mixing bowl, mix cocoa powder and baking soda together. Add in half of the vegetable oil and boiling water and mix until thickened.
Stir in the sugar. . . (this surprisingly will make it a smooth mixture)

And the eggs and remaining oil.
Add flour, vanilla and salt and mix just until flour is completely incorporated.
Pour half the brownie batter into an 11x7 inch pan and spread out to the bottom. Pour pumpkin mixture into a layer over the brownie batter. Top with remaining brownie batter.
Bake at 350 degrees for 40-45 minutes or until a toothpick inserted comes out clean. Allow to cool before cutting into squares. (This might be more difficult than you realize.)
My husband was lurking around the kitchen waiting for these to be cooled off enough to cut. I probably cut them earlier than I should have. This little monster had two brownies, which he shared with me. His daddy had three of his own...
