Mini Pumpkin Pies
First stop in the Great Pumpkin Recipe Journey is (surprise, surprise) pumpkin pie! I wanted little serving sizes so I made them miniature. It might also have something to do with the fact that it's no surprise that I love miniature desserts!

Chocolate Hazelnut Minicakes
Have you ever had one of those Ferrero Rocher candies? If not, then you need to go out right now and buy them and then try and eat just one. I'm pretty sure those are my favorite candies. Anyway, I was sitting in my house, trying to figure out what kind of minicake to make for my class on Monday when I realized that I had yet to make something with Nutella in it. I battled with myself and even asked a friend of mine, Matt what I should put in them. He and I threw around some ideas but ultimately, I came up with this. I think they taste like a Ferrero Rocher. Make some, and then let me know if you agree!

Marble Cake Pops
The first time I ever tried these things was when my friend Jen made some and brought them to work. I had 2 and then had to distance myself from them to keep from eating more! They were so delicious. Hers were shaped like little piggies and I giggled to myself as I bit into my very own piggie pop. I didn't realize just what I was getting myself into. After that, I told myself I would make these someday. Of course instead of just trying a simple chocolate cake, I have to try and be fancy about it. I dunno, its that "go big or go home" mentality that I seem to have!

Ice Cream Cone Cupcakes
Today we are celebrating my younger son's birthday. His birthday isn't technically until October first, but I'm leaving for three months on Wednesday. Yes I did say three months. If you do your math, you will realize I won't be around for the holidays. This means I won't be able to make a turkey for Thanksgiving. It also means no Bouche de Noel... or I might just make it when I get back anyway. It's a sad fact of life. Anyway, I wanted to make something special for Aiden for his birthday so I decided to make some of these.

S'mores Minicakes
I remember as a kid the first time I ever learned what a s'more was. I was amazed at the combination of chocolate, graham crackers and toasted marshmallows. After the first camping trip where I got to experience it, I tried desperately to recreate the flavor in the microwave. Not sure if any of you have ever tried but it doesn't work very well. My friend Cruz challenged me to recreate this combination in cupcake form and this is what I came up with.

Chocolate Banana Mini-Muffins
So, if you're looking at these and you're expecting them to show up at work, don't hold your breath. I highly doubt any of them are making it through tonight. These are freaking delicious. Caramel Macchiato Minicakes
Grande Iced Non-fat Caramel Macchiato. That's my Starbucks drink. (In case any of you want to pick one up for me as a suprise.. hint, hint!) I had made Mocha Cupcakes before and was racking my brain for new ideas when I thought, "Why haven't I tried the beverage of my personal choice?" (My other drink - the one around Christmas time - is a Peppermint Mocha, but I already posted that one here.) I encourage all of you to try creating something based on your favorite something else. Chocolate Peanut Butter Minicakes
So, I know it's been awhile since I posted. This weekend has been crazy! My brother-in-law Brian came out to visit. (It's the hubby's birthday and it was a surprise from us to him!) Since he's been out here, it's pretty much been non-stop shenanigans and I haven't had much time to bake. However, my friend Lauren requested these specifically and how can I say no? Chocolate Mint Minicakes
I don't know why I never thought of these before. The choco-mint combo is by far my favorite pairing of sweet flavors. I would always get excited when I would go to Starbucks and find the Peppermint Mocha back. My friend at work mentioned I should make these. Actually, he always has good ideas for desserts. He's the one who inspired me to make the Caramel Macchiatto Minicakes. My original intention was to use mint extract in the frosting, that is until I discovered I was out. (I had an empty bottle in there... who keeps an empty bottle of something for so long?) It was time for me to get creative...

Chocolate Cookie Dough Minicakes
Okay so you're probably thinking one of two things. Either, "Oh, my god, that looks AMAZING!" or "Won't that make me sick?" And here is my answer to both questions: Yes, it is amazing but no, the cookie dough has no egg in it so no worries about salmonella poisoning. (Yay!)
In fact, the chocolate cake is egg-less as well (I know crazy right?!) so if you're itching to bake something and just happen to be out of eggs, this is a great recipe to try!

Corn Bread Minicakes
So, my First Sergeant (who is AMAZING) is leaving the squadron after this week and I'm super sad about it. However, she is always asking me "When you making some more cupcakes?" So of course, for her going away BBQ I had to make some! A little background on Sgt Anthony: she's from Mississippi, has a deep southern accent, and is always saying things like "Don't make me get 'sippi on you!" So in honor of her Southern roots, and because I've wanted to try something a little savory for a while now, I thought I would try my luck at making some cornbread cupcakes.

Orange "Dreamsicle" Minicakes
So, usually when I bake something delicious, the hubby is always right there to "test" it. He also gives me a lot of great ideas of what I should make or what would make them just "perfect." You could say he's kind of like my partner-in-baking-crime.
Well he had been begging me to make these for some time since Orange Creamsicle cake is his favorite. I actually made these a few weeks ago but a friend of mine requested that I post the recipe so she could make some for her daughter's birthday so here it is.
