Roasted Pumpkin Seeds


And now it's time for the simplest recipe ever. Roasted Pumpkin Seeds! A delicious, yet healthy snack that can be whipped up between those Mini Pumpkin Pies and Pumpkin Pancakes! Waste not, want not, that's my motto!  Simply meaning, if you can use something you might otherwise throw away, then why not use it?

Pumpkin Puree



For a typical pumpkin recipe, you can use a jar of pumpkin puree.  This can come in handy if it's the off season and a pumpkin is difficult to find.  However, during the fall season, when pumpkins are a plenty, it only makes sense to use fresh.  It tastes better and isn't too difficult to prepare.

김밥 (Kimbop/Korean Sushi)


If you've never had sushi and are put off by the fact that it has raw fish in it, you really need to expand your mind.  First off, not all sushi has raw fish.  In fact, the term "sushi" in Japanese actually means "rice wrapped with seaweed."
The cooked variety are what I call "starter sushi."  They are characterized by the "California Roll," which consists of cucumber, imitation crab meat and avocado.  There are also other varieties of cooked sushi including the "Philadelphia Roll," which is basically the California Roll with cream cheese.  Kimbop is a Korean sushi.

Chocolate Banana Mini-Muffins

So, if you're looking at these and you're expecting them to show up at work, don't hold your breath. I highly doubt any of them are making it through tonight. These are freaking delicious. Also, if you haven't noticed, they are labeled "healthy." That's right. You heard me. Healthy and delicious? Ce n'est pas vrais! Oui, c'est vrais. Thanks to Kelli for the inspiration!

Bruschetta

I don't know about you but I love Bruschetta. I would get it every time I went to Olive Garden but I am also in love with their bread sticks and if I get Bruschetta and eat the bread sticks and eat the salad and eat some pasta, well that's just too much. (And I gotta save room for Tiramisu.!) Anyway, here's a delicious recipe that I whipped up tonight for some fresh Bruschetta.

Fresh Salsa

I LOVE fresh salsa. So much that whenever I make this, I usually eat the whole bowl in one day. It smells delicious and tastes so fresh and clean. And it's actually pretty good for you!
