Shane's Kick-Ass Chili

My husband makes the best chili.  I have yet to meet anyone who didn't agree. In fact, I convinced him to make some for a pot-luck we had at work one day and one sergeant said it was so good, he would slap his momma.  He added that he wanted to rub it on his gums.

 Any time I come home and smell the delicious chili aroma in the house, I get excited.  One day I came home and the house was filled with spicy peppers and I quickly ran over to the crock-pot on the counter to steal a spoonful.  To my slight dismay, in the crock-pot was taco meat and not my beloved chili.  I have to admit, even though I love taco night, I was a little disappointed.


Normally I post my own recipes on here, but this chili is so good, I wanted to share it with you all and let you partake in the joy I have from eating it.

Ingredients:
1 tsp. red pepper
1 c. broth (can be beef or chicken)
2 tsp. cumin
3 - 8oz cans tomato paste
1 - 10 oz can tomato sauce
1 can RoTel tomoatoes/peppers
1/2 tsp. white pepper
2 tbs. minced garlic
1/2 tsp. salt
1 tbs. chili powder (not "chili seasoning")
1/8 c. honey
1/2 c. brown sugar
2 tbs. oil
2 lbs your choice meat (This time we used chicken. You can also use beef/sausage etc.)
1 jalapeno pepper
1 cerrano pepper
1 anaheim pepper
2 yellow ancho chilis
1 onion
You choice of veggies (We used a zucchini, 1 c. snap peas, and 2 c. corn)
3 - 15oz cans of beans (We always use pinto and then the other 2 we just buy different colors)
2 c. shredded cheese
2 cans pineapple chunks (You could use a whole fresh pineapple, but I got too eager to eat ours so it was gone before we could make the chili.)
1-2 shots of whiskey

Before you do anything, pour the whiskey into the drained pineapple and allow pineapple to soak up the delicious booze while you prepare the rest of the chili.





Combine first 10 ingredients into a crock pot (the red pepper to the chili powder)








Stir in honey and brown sugar.








Dice up meat choice into reasonable bit-sized pieces and season as desired.







Using 1 tbs. of oil, saute meat until cooked through.








Add cooked meat to crock pot.









Dice up onions, place in bowl and set aside.









Remove seeds from middle of peppers and rinse thoroughly. Dice up and mix with onions. Dice up remaining vegetables and mix with peppers and onions.








Using remaining oil, saute veggie mix until softened.









Mix veggies into chili.










Add beans and allow to cook for an hour on high.







About a half an hour before serving mix in cheese and pineapple.  (The pineapple makes the chili freaking awesome so don't skip on this ingredient.) Continue to cook chili in pot while serving. You can keep it on high, just be careful when eating it as it is hot.




Serve and enjoy!

This chili has kind of become a staple at our BBQs lately.  For some reason, when we have pot-luck BBQs and I say that we will bring chili, people have been giving me funny looks.  Apparently chili is supposed to be a winter-time food?  I always thought of it as a cook-out food.  Even though the photo shows it in a bowl, I put mine on a beef brat and made the best freaking chili dog of all time.  All this chili blogging is making me want a bowl now. I wonder if we have any left overs...
