Chocolate Peanut Butter Cookies

These. Cookies. Are. Freaking. Awesome. Or, as my boss would say, "Dude, those cookies are pretty legit."

Who doesn't love the choco-peanut butter combo? (Aside from my best friend, who has this hatred for peanut butter that I will never comprehend.) I bought these peanut butter chips without really knowing what I would do with them, and then in the end just decided to put them in chocolate cookies. (I know, not that creative but it's been a long day and I just love cookies!)  As a last attempt to make them pretty and worth blogging about, I decided to drizzle some chocolate on top.

Cookies


Ingredients:
The chocolate chips and oil are for the Chocolate Drizzle
2 1/4 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
2 tbs. unsweetened cocoa powder (Not pictured)
1 c. (2 sticks) butter, softened
3/4 c. granulated sugar
3/4 c. packed brown sugar
1 tsp. vanilla
2 eggs
Chocolate Drizzle (recipe follows)





In a medium-sized bowl, whisk together flour, baking soda, salt, and cocoa powder. Set aside.







In large bowl, mix butter, sugars and vanilla together until creamy. Add eggs, one at a time, mixing in between until blended completely.








Gradually add flour mixture to butter mixture and mix until smooth. Stir in peanut butter chips.





Drop by rounded tablespoon-ful onto cookie sheet. (Use wax paper on cookie sheet for easy clean-up!) Bake at 375 degrees for 10-12 minutes or until cookies are slightly darker than the batter. (I found 11 minutes seemed to be perfect.)




Chocolate Drizzle


Ingredients:
1 c. chocolate chips of your choice (I used dark chocolate but white chocolate would probably make a cool contrast!)
1 tbs. vegetable oil

In a small sauce pan, combine chocolate chips and oil and heat until chips are melted, stirring constantly. (Don't want to burn the chocolate!)
Lay out wax paper on the counter and place the cookies on top of the paper. Using a fork, drizzle chocolate over cookies.


I realize this blog as a limited number of photos. Sorry about that. I got kind of excited about decorating that I completely forgot to take pictures! I hope this isn't too much of an inconvenience for anyone. Anyway, these are a surprise for everyone I'm flying with tomorrow. Unless they read my blog, of course. :D
