So, maybe it's all the studying or maybe its getting home and hearing how the kids terrorized their father all day. It could be that the only time I get to relax is the shower I take after get off work. Actually even that's not very relaxing when I have little hands and noses pressed up against the glass of the shower door. At any rate, I really needed to bake today. Baking is my outlet. It's what I do when I'm stressed out and it calms me. Today, due to the lack of time - thanks to all the studying I've had to do for my upcoming test - I decided to pick something simple and quick.
Cookies
Ingredients
2 1/4 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 c. (2 sticks) butter, softened
3/4 c. granulated sugar
3/4 c. packed brown sugar
1 tsp. vanilla extract
2 eggs
8 oz. chocolate chips
Whisk the flour, baking soda and salt together in a medium sized bowl.
Combine the butter, sugars and vanilla together in a large bowl and mix thoroughly.
Add eggs one at a time, mixing in between. Mix until well integrated.
Stir in chocolate chips. (I love the Hersey's special dark!)
Drop by rounded tablespoonful onto ungreased cookie sheet. Bake at 375 degrees for 8-11 minutes or until golden brown on the edges.
Everyone loves a chocolate chip cookie! I personally just love cookies. Of all types. They make me happy. Curling up on the couch during monsoon season with a tall glass of milk a couple of cookies and a blanket and watching a movie, I mean is there any better way to spend an evening? I can guarantee you, its one of the better ways as compared to studying. Hey, if it's a Korean drama I'm watching, it still counts as studying, right? The awesome thing about chocolate chip cookies is you can add pretty much anything to them: more chocolate chips, cocoa powder, peanut butter, mint, cranberries, coconut, walnuts, bacon... don't let people talk you out of trying something new. After all, the chocolate chip cookie itself was a happy accident - Thanks, Ruth Wakefield! See? Who says you can't learn something on a baking blog?
