Lately, I haven't been making dinner much. Since I got back from deployment, I have been working long hours and my husband has been doing most of the cooking. (Aside from the random home-made chicken nuggets I sometimes make for the kids). Well tonight we were both pretty worn out and he was talking about going out to buy something for dinner. We have been eating out a lot lately (mostly because both of us are too tired to cook anything) and I know this is bad for our diet and wallets. So, I sucked it up and took advantage of this opportunity to not only make something for the family to eat, but also get a blog post out of it. (And I may have gotten a little buzzed in the process.. haha).
Shane and I love Moscato and always keep some at our house. I also know that several of my girls like Moscato as much as I do, so I included it in this recipe.
Ingredients:
Chicken Breasts (I used 2, which is perfect for our little family right now but you can use 4 and you will have plenty of the rest of the stuff)2 tsp butter
1/2 butter
1/3 c. Moscato
1 tbs. Rosemary
Salt
Pepper

Season the chicken with salt and pepper on both sides. Cook chicken, browning on both sides and cooking through. (I have found the best way to cook thicker pieces of chicken is to turn down the burner to medium - low heat and cover and cook slowly. It takes about 5-10 minutes on each side.)

While chicken is cooking, pour a glass of wine. Taste wine. (This step is very important in cooking the chicken as it is a quality check and will directly affect the chicken's flavor.) Taste wine again.
Chop onion into slivers. Drink more wine.

Once chicken is completely cooked, set aside and keep warm. Put butter, onions, salt and pepper in pan and cook about 5 minutes, or until onions have softened. Pour in reserved wine and add rosemary and cook until most of the liquid is absorbed. (Both from the pan and from your glass.)
Pour onions over cooked chicken. You can serve this on a bed of rice or pasta. I have sticky rice with a side of steamed peppers. Open a new bottle of Moscato to drink with dinner, if needed.
I found this chicken to be quite pleasant. Not too bland and not too seasoned. It may have been the wine talking, but you can't go wrong if you follow the teachings of Julia Child who said, "I like cooking with wine. Sometimes I even put it in the food I'm cooking." I think I will definitely cook with wine more often.
