Cinnamon Rolls

Today is my oldest's first day of Kindergarten. Man, time flies. It seems just like yesterday when a 19-year old version of me was looking at this tiny baby wondering how I, of all people, will be able to take care of this beautiful little boy. Five years later, I still look at him with no clue. I'm pretty sure I'm just as excited/nervous for him to start school as he is, if not more. I'm so excited for this momentous occasion that I decided it would only be right to make a special treat for breakfast. Enter homemade cinnamon rolls. Am I not the best mom ever?
I don't have any yeast so I had to find a recipe that would yeast-free. These also happen to be egg-free and pretty easy to whip up.

Filling
Ingredients:
4 tbs. butter (softened)
1 c. brown sugar
3 tsp. cinnamon
Combine ingredients together until a soft, crumbly mixture is formed. Put in fridge for later use.

Dough
Ingredients:
2 c. flour
2 tbs. sugar
4 tsp. baking powder
1 tsp. salt
3 tbs. butter (softened)
1/2 - 1 c. milk
Filling




In a large bowl, stir together flour, sugar, baking powder and salt









Cut in softened butter. Mix well.









Stir in milk to form a soft dough.







On a lightly floured surface, roll dough out to 1/4 inch thickness into a rectangular shape.








Spread filling out evenly onto dough.









Roll dough back up with filling inside.







Slice dough into 1/4-1/2 inch slices.








Place in pan. Bake at 400 degrees for 20-25 minutes or until a golden brown. (I made them the night before and stored them in the fridge. Then baked them the next morning)




One note for these that I would have done better is roll them tighter. When they came out they fell apart a little. I'm sure if I would have waited for them to cool a bit before taking them out, they might have stayed together better but also wrapping them tighter. Anyway, these were a delicious way to start the week. I have to go drop my baby off for his first day of school now. Hope you like them!
