Okay, so its been awhile since I've posted on here. I have been super busy getting ready for my trip to the desert. Last night, we went to my sister, Rachael's house for what I think you would call a house-warming party and sometime during the night, my husband told me he wanted biscuits and gravy for breakfast in the morning. Apparently that's his hint for, "Make me some biscuits, woman!"... also it means he's doing the dishes.
When I was watching these bake, I gotta say, I was really disappointed. They're not the big puffy biscuits I was hoping for. But when I took a bite, I was pleasantly surprised. They are moist and delicious. I ate one with honey, but the rest were topped with delicious sausage gravy. No, sorry the recipe isn't here. It's not because I don't like you guys, its because I used gravy out of the package. Please don't judge me. In my defense, I added real sausage.
Ingredients:
2 c. all-purpose flour
1 tsp. salt
1 tbs. sugar
4 tsp. baking powder
1/3 c. shortening
1 c. buttermilk
Sift all of the dry ingredients together. (Apparently sifting them well helps the buttermilk and shortening blend better.. I dunno..)
Cut in the shortening. Mix just until incorporated. (You can see I had the hook attachment on my mixer. I thought I would try using it. It didn't work so well. I eventually switched back to the paddle attachment.)
Pour in milk and mix just until incorporated. Batter should be relatively wet. (If it is too wet, you can try adding a bit more of flour. If it's too dry, add a little more milk.)
On a lightly floured surface (be sure the surface is clean before you flour it, of course) pour out the batter out. Roll out and cut into biscuit shapes. (If the batter is too wet, you can pinch it off and place it on the pan by hand. If you don't have a biscuit cutter, try using a large cookie cutter. I used a heart-shaped cookie cutter before and they turned out really cute and fun for the kids.)
Place the biscuits on a pan. (For softer biscuits, place them closer together.) Bake at 450 for 10-12 minutes. For a browned top, brush the tops with butter and bake for another 2 minutes.
My biscuits came out a little flat and the batter was really sticky. I altered the recipe so hopefully that result shouldn't happen for you. They still turned out delicious but I was kind of hoping for something a little more pretty. I guess I rely too heavily on aesthetics. Anyway.. hope these turn out good for you!
