Pumpkin Pancakes

It's breakfast time in the Jones household and since I'm smack dab in the middle of the Great Pumpkin Recipe Journey, that means Pumpkin Pancakes!  These are nice and thick and are delicious with maple syrup.

Ingredients:
2 c. flour
2 tbsp brown sugar
2 1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
2 c. non-fat milk
1 tsp. vanilla
3 tbsp olive oil
1 c. pumpkin puree

Combine dry ingredients in large bowl and mix well.  Mix in wet ingredients until well combined and there are no more clumps. Pour into pan and cook on medium heat (350 degrees on an electric skillet) until edges are dry. Flip and cook other side until browned.  Pour on the syrup and enjoy!
